This is a different alternative to Guacamole and much quicker to make since it all gets thrown into a blender. I liked to snack on it with carrots or celery, homemade pita chips or baked tortilla chips.
- 1 can white cannelloni beans, drained and rinsed (reserve 4 tsp)
- 1 ripe avocado cubed
- 1/2 lime, juiced
- 4 tsp of juice from can of beans
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 1/2 tsp garlic powder
- Place all ingredients in blender. Add additional water if necessary to desired consistency.
