These are so delicious! I had to stop myself at eating only 1/4 of the recipe since Avocados are high in fat but the good type of fat!!
- 1/4 cup flour
- 1 tsp Kosher salt
- 2 large eggs
- 1 1/4 cup Panko Bread crumbs
- 2 firm-ripe Avocados, pitted, peeled and sliced 1/2 inch wide
Coat avocado slices in flour, then egg, and then Panko bread crumbs. Spread on a cooling rack that is sprayed with Pam and then place on a cookie sheet. Spray top of wedges with Pam and sprinkle the salt. Bake at 450 for about 15minutes. Enjoy!
